If your laptop has a VGA input then, yes you can connect your 360 to it.but other than that there are no other ways.

The laptop screen to unplug it might be possible with something usb based but im not completely.

it would be unnecessarily hard and expensive on your laptop, but you could buy a computer monitor and get tome converters/wires and try it on that.
